Jennifer Wilson’s White Chicken Chili
Ingredients:
- 3-4 skinless, boneless chicken breasts
- 1 chopped onion
- 2 big cans of Cream of Chicken soup
- 1 big can diced green chiles
- 2 tsp garlic powder
- 2 tsp ground cumin
- 1 tsp oregano
- 1 tsp dried cilantro
- ½ tsp chili powder or ¼ tsp cayenne pepper
- 5 cans pinto beans drained and rinsed
- 2 cups water (approx.)
- Boil chicken in water (can cut in smaller pieces.) Shred.
- Add all ingredients to a large crockpot. Stir occasionally to keep beans from sticking.
- Top with shredded cheese and chopped green onions, if desired
